Chicken meatballs in tomato sauce

Ingredients

The Meatballs

• 500g chicken mince
• 1 egg
• ½ cup breadcrumbs
• 2 cloves garlic, minced
• Handful of spinach, finely chopped
• Grated parmesan, to taste
• Salt, to taste
• Pepper, to taste
• Dried oregano, to taste

The Sauce

• 1 tin of crushed tomatoes
• 1 onion, finely diced
• 2 cloves garlic
• Olive oil, as needed
• Fresh basil, to taste
• Pinch of sugar

Instructions

combine all meatball ingredients and cook

cook onion and garlic, add tomatoes and basil, add meatballs

serve with wholemeal/chickpea pasta for me (I'll prep this) and regular spaghetti pasta for Will and doug
